So I was thinking, “Man, I should get a good parfait recipe on my site, that would be a great addition to a P90x meal plan.” Enter Samantha, who created this very pretty one!
I know that I always say that I was thinking of creating a recipe before someone sends it to me, but seriously, it’s like you guys can read my mind. Every time I think, “I really should get off my butt and cook [insert recipe item here],” one of you lovely folks sends me a recipe with a photo that does it better than I would have anyway. So I guess you are determined to reinforce my laziness! LOL. Please continue. =)

“Here’s a really great breakfast recipe, Banana Scrunch. This is a single serving:
Ingredients:

Mix protein powder into yogurt and set aside. Mix crushed bran flakes with oats, and heat mixture in skillet on medium heat for about 2 minutes. Drizzle bran flake and oats mixture with honey, stir and heat for about 2 more minutes (until edges of oats are crunchy). You can make as many layers as you like. Scoop some of the bran flake and oats mixture into the bottom of a tall glass, layer with sliced bananas. Scoop some vanilla protein yogurt on top, then repeat the layering process for as many layers as you like… bran/oat, banana, protein yogurt, etc. Enjoy!”

Could I use 4 oz of yogurt, 1/2 large banana, 1/4 cup of crushed corn flakes to get the same taste, but lower calorie and smaller portion?

Am trying this tonite when DH gets home. Always looking for a ‘sweet’ & am trying to show him it doesn’t always have to be about chocolate! Using Fage Total Greek yogurt, instead of bran cereal flakes — 1/4 c. organic wheat germ & 1/4 c. ground flaxseed. We’ll see how he likes it! Def sounds yumy to me!

This sounds great. I just started P90 not the X. When I put this in the recipe calculator it comes out to be 629 calories/92 Carbs/7 Fat/ 54 Protein. This seems a little high? Am I missing something?

Gary, I think you are right! It’s too much calories… I watch everything I eat and there is no way I can add this parfait in my daily menu…
