Turn oven broiler to High. Grate Mozzarella, and combine in a bowl with one egg white. (Usually low-fat cheese has trouble melting, so this technique helps the cheese melt while adding a bit of protein.) Separate English muffins, place the 4 halves on a baking pan. Layer pesto, Portabella mushrooms, and cheese mixture. Broil on High for 2-3 minutes, watching carefully, or until cheese has melted and started to brown.
