Mandarin Salad with Candied Almonds

Mandarin Salad

I am so excited about this one, guys, because not only is it a delicious salad, it is a recipe for P90x CANDY! Woot! Can’t argue with that. This is my mom’s famous salad that she takes to potlucks, except I used honey to candy the almonds instead of plain sugar.

Ingredients for Candied Almonds:

  • 1 oz. sliced almonds
  • 1 Tb. honey

Spread tin foil on the counter. In a small saucepan over medium heat, add almonds and drizzle honey over it. Cook, stirring with a soft spatula, for 3-5 minutes. Use the spatula to transfer the almonds to the tin foil, and working very quickly, spread the almonds into a thin single layer on the foil to harden.

Ingredients for Mandarin Salad:

  • 1 full recipe Candied Almonds, above
  • 3 cups spinach or lettuce
  • 3/4 cup Mandarin oranges
  • 1/2 stalk chopped green onion (optional, not pictured)
  • 1 Tb. fat-free vinaigrette dressing

Combine all ingredients, and enjoy!

P90x Diet Plan Portions:

Full salad is 1 1/2 vegetable servings, 1 fruit serving, 1 condiment serving, 1 Double snack serving. (The candy by itself is 1 Double snack serving and 1/2 condiment.)

P.S. This candy is delicious by itself. As a kid I would make a big batch and just eat it straight as a treat! It usually lasts in the fridge for up to a week.

P.P.S. I am not fond of overly dressed salad, so I use 3 cups of spinach/lettuce in this. The juice from the oranges helps make your vinaigrette go farther. However if you like your salad doused in dressing, you might want to reduce to only 2 cups of leafy greens for only 1 vegi serving.
