Grilled Parmesan Zucchini



You know me – vegis are not my favorite thing in the world. However I want to be healthy, so I do force them down, and of course now that I’m managing my hubby’s P90x nutrition, he has at least 4 servings a day. As a result, I am constantly on the hunt for ways to make my hubby’s P90x vegetable servings less of a chore. Thus my attempt here at grilled zucchini. These were actually so good that after eating a first slice out of obligation, I ate a second slice, BY CHOICE. =) Lesson learned – almost everything is better when covered in cheese!!

Ingredients:

  • 2 whole zucchini
  • 2 oz. Parmesan cheese
  • 2 Tbs olive oil
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
Cut zucchini in half lengthwise. Drizzle both sides of each piece with olive oil. Cover the flat side with garlic salt and pepper. Measure out cheese and have it ready. Grill flat side down for approx. 3 minutes, then flip over, cover flat sides with Parmesan, and grill for approx. 5 minutes more until zucchini is crisp-tender. (Alternately, if you aren’t using a grill, broil the zucchini on the High setting for approx 3 minutes each side, watching carefully to make sure it doesn’t burn.)

P90x Nutrition Plan Portions:

2 grilled zucchini halves provide 1 vegi serving, 1 fat serving, 1 dairy serving.

P.S. If you don’t have any Parmesan, any other cheese would be yummy here too. Just cut into thin slices and melt them on there!

My fiance and I have been doing p90x for the past month and a half, and are just getting into the nutrition routine because we were living in Africa, and well, we were eating what we could get a hold of basically! Now that we’re back stateside with all ingredients readily available, we now have the tools to follow the nutrition plan. Thank you so much for such great, simple, and delicious recipes that will help us really achieve the results we have been looking for.

    Hi CJ (as you can tell, Im scouring your site for recipe ideas).

    Quick question, in your recipe you used 2 tbsp of olive oil. On the P90X Nutrition guide, it states that 1 tbsp olive oil is a fat serving. How did you get 1/2 Fat serving?

      By doing my math wrong, that’s how! LOL. You’re right – the portions on this should be 1 fat serving, not 1/2. Fixed it.

    This looks yummy.. will definitely try this. I do a similar recipe with grilled asparagus. Asparagus also tastes good in an omelet (another way to get some veggies in).
