Easy BBQ Chicken



This is an awesome, easy, delicious protein source. Baking the chicken in a foil pouch makes for moist, juicy chicken. My hubby takes this to work for lunch and he says that all of his friends are jealous because it smells so good. Wouldn’t they be surprised to learn that it only has 2 ingredients!!

Ingredients:

  • 2 boneless skinless chicken breasts
  • 2 Tb. fat-free BBQ sauce

Preheat oven to 350 degrees. Cut chicken into large chunks. Line pan with tin foil. Combine chicken with BBQ sauce inside of tinfoil, then close tin foil over it to make a pouch. Bake for 20-25 minutes or until chicken is cooked through. (Try not to overcook, or chicken will dry out.)

6 oz. of BBQ chicken is 2 protein servings, 1/2 condiment serving.

    CJ- I don’t eat seafood and alot of the meals in the P90X nutrition plan are Seafood and I was wondering is there an alternative for not eating seafood will fish oil pills substitute. It’s been bugging me the whole time and I’m on my 5th day of P90X? 🙂

      My hubby and I eat almost no seafood either. We recently tried salmon for the first time!
      You do not need to eat seafood or take seafood suppliments to stick with the nutrition plan. Check out my alternative to the official meal plan approach – my P90x menus and shopping list ebook. It uses almost no seafood!

    I am SO EXCITED to try your recipes! I was about to go CRAZY looking at the…no other way to describe it…bland and repetitious meal plan offered in the Nutrition Guide (I’d already decided that Portion would be the way to go with me based on that, plus the recipes are crazy involved) Next hurdle, how do I juggle the portions and all that?

    So here’s my question, you talk about planning your day (up to 2) of meals, do you have a meal plan sheet that you use, or do you just use your food journal itself and simply stick to it?

    Just curious. I am super excited to try your mushroom pizzas, twice baked potatoes, mac n cheese, chicken caesar wrap, bbq chicken…basically all the recipes i’ve seen so far. Time to keep clicking thru your site, which will certainly become more popular than facebook (or my bank page) on my personal CPU. You are AWESOME!

    I’m thinking this would be a good bulk make ahead as well making several pouches to freeze for a quick way to add protien servings to your lunch or dinner!!

      Here’s the funny thing, Kevin. I’ve never been that great of a cook!! Something about the constraints that the P90x nutrition program puts on me brings out my creativity. But normally, I’m an indifferent cook, at best! lol. I think that may be why my recipes end up being so simple. a) I am low on time and b) I don’t know any better! =) Thanks for the compliments, though. You and your girlfriend might find, as I did, that doing this program teaches you how to cook! =)
