Cucumber Salad

Wondering what to do with the other half of the cucumber from yesterday’s Cucumber and Citrus Infused Water? Look no further! Either throw it into a tangy Chicken Salad Sandwich, or try out this easy cucumber salad. Some folks make this with a squeeze of lime – I use lemon because I usually have it in my fridge. Either way, it makes for a light, easy P90x vegetable serving!


  • 1/2 chopped cucumber (approx 1 cup)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp lemon or lime juice

Chop cucumber. Combine with lemon juice, salt and pepper. Serve cold.

Full recipe provides 1 P90x vegetable serving.

P.S. I know, this barely qualifies as a salad! lol. If you’d like to add another vegi serving in there, try chopping a whole tomato into it. If lemon or lime juice don’t do it for you, try adding a Tb. of fat-free Italian dressing and count it as 1/2 a condiment serving!
