Chocolate Filled Strawberries

You’re not imagining things – there really is chocolaty goodness oozing out of the middle of these strawberries! And yes, this is a legit P90x dessert! 🙂 These chocolate-filled strawberries use sugar-free fat-free pudding, but you’d never know they were good for you. Being good never tasted so bad (for you, that is!). Happy Friday. 🙂

Ingredients:

  • 12 strawberries
  • 1 package Jello instant sugar-free fat-free chocolate pudding
  • 1 cup fat-free milk
  • Fresh mint sprigs

Cut the stems out of the strawberries in the shape of an X ;-), so that the hollow inside of the strawberry is exposed. In a blender, add 1 cup cold fat-free milk and package of pudding.


Blend on high for 2 min. Scoop pudding into a Ziploc sandwich bag, then cut the tip off of one corner of the bag. Squeeze the bag to pipe the filling into the center and tops of strawberries. Top with mint sprigs. Refrigerate for at least 5 minutes to set.

P90x Portion Plan Servings:

6 strawberries are 1 fruit serving and 1/2 carb serving.

P.P.S. I haven’t tried this, but you could try adding a scoop of chocolate protein powder before you blend it and see if it works! Not sure if that would change the ability for it to set/thicken? It’d be interesting to find out!

P.P.P.S. In the interest of full disclosure, I should add that this may be cheating a TEENSY bit because 1) the pudding contains artificial sweeteners, which aren’t addressed at all in the nutrition guide and thus I’m thinking Tony doesn’t entirely approve of them, and 2) I’m counting it here as a partial carb serving, when your carbs are supposed to be complex whole grains. I don’t think either are a huge deal, but that does mean that you probably shouldn’t have these every day of the week and don’t double them and count them as your full carb serving. Consider this recipe a tasty treat!! =)

    Also, strawberries stuffed with reduced fat creamy PEANUT BUTTER is a salty/ sweet twist on your daily snack. And, as far as i know its P90 friendly 🙂

      Awesome idea, Archer! That sounds really yummy, kind of like the raw version of peanut butter and jelly.
      If you stick to using 1 Tb of peanut butter and 1 cup strawberries, that would be 1 snack serving and 1/2 fruit!

    I’m on week three of P90x. With the holiday weekend and having friends to entertain, it’s going to be hard to stay on the meal plan – but I am determined to do so. This looks like a nice treat to serve – and to actually try! Do you have any other suggestions about meals to prepare for the holiday when you’re actually entertaining and at the same time trying to stay on plan?
