Burnt Green Beans

No, this was not a mistake – I really did burn my green beans on purpose! This is my famous recipe, one that is requested by family at the holidays. Over the years as I’ve made green beans, I’ve noticed that the burned beans were the tastiest ones, so each time I’d burn more and more of them on purpose! lol. This recipe is delicious and P90x friendly. It’s not labor intensive, however it does take a very long time to cook, so you’ll need to try this one when you’re not in a hurry. It’s worth the wait!


  • 1 bag frozen whole green beans (frozen work better than fresh, actually)
  • 1 tsp. garlic salt OR 2 cloves finely diced fresh garlic and salt
  • Pepper to taste
  • 4 Tb. olive oil
  • 1/4 cup white or red onion (optional – not pictured)

Burnt Green Beans Recipe Directions:

  • Empty bag of frozen beans into a skillet over medium-low heat (add fresh garlic and onion here too, if you’re using them).
  • Drizzle with two Tablespoons of olive oil, mixing to coat.
  • Sprinkle with garlic salt and pepper.
  • Cover and cook for 15 minutes.
  • Uncover and cook for 30 – 45 minutes, adding the remaining 2 Tb. of olive oil if it gets too dry.
  • Beans will get quite brown  and burned – that’s the point! The more time you have and the browner they get, the yummier they are. (See my P.P.P.S.)

P90x Portion Approach Servings:

1/4 recipe is 1 vegi serving, 1 fat serving.

P.S. I have not done it this way, but if you have already used your fat serving for the day, you can try making this with low-sodium chicken broth instead. You will probably have to use more of it and it will change the flavor somewhat (probably for the better), but that would cut out the fat serving. If I were doing that, I’d spray with nonstick cooking spray and add broth a couple of Tablespoons at a time.

P.P.S. If you’re not a good cook, this is a good one to try. It’s very forgiving. Heck, you’re SUPPOSED to burn it!

P.P.P.S. 12/12/10 Update: I have recently learned that there IS such thing as cooking these beans too long! lol. On Thanksgiving this year I made these and the turkey was delayed, so I let them cook for over an hour and a half! Let’s just say that while they were still edible, EVERY SINGLE bean was black all the way through. They looked like cooked worms! We all ate them and enjoyed them enough, but I don’t think I’ll do that again. =)

    Crazy my dad has made these for me since I was a little kid. So basically the last 16 years that I can remember. I thought we might have been the only people to do it. We burn them in a sautée pan with a little garlic and tiny bit of salt and pepper. Cool them till they are just burnt maybe 25 minutes. Amazing I could eat pounds of them. It’s like fries but good for you!

    I have never posted to a site…I have a complaint with these burnt green beans…

    I can’t seem to have enough of them to serve my family for I am picking and eathing them continuously the second they start to burn…

    My question is if I want to triple the recipe can I somehow do this in my oven so as to have ample heat source space to burn the beans???

      LOL!! Oh for problems like these, Ellen! =)
      Yeah, instead just try tossing them in the olive oil and cooking them under the broiler for a few minutes. You might want to stir them once.
      I love the broiler for tasty, crispy toastiness. Make sure you watch them very carefully, though. The broiler can burn things (too much) very fast!

    I have a question regarding this recipe in your ebook. In the meal plan book, it states this recipe will make 4 1 cup portions, but after cooking I yield only 2 cups. I could be cooking them down too much or packing them too tight in the cup. I don’t think that is the case. I made a second batch today and came out with the same amount. Should I be quartering the recipe for portioning?

      Yeah, I’d say go ahead and just quarter the recipe. You are still eating 1/4 bag of green beans. If it were me, I’d give my hubby 1/4 of the recipe and call it a veggie serving…

    Hey CJ, I had no idea any one but myself ever made these…..mine was by mistake the first time. I put a can of green beans on to cook and before I put them in the pan I drained most of the water off, because I didn’t want to have to wait for them to cook down. I turned the burner up on high and actually forgot about it until I smelled them “burning”. The water had evaporated and the green beans were stuck to the bottom of the pan. I pulled them off the burner and put a lid on….the moisture from the lid being put on allowed the beans to come up nicely and not stick….they were delicious!! Burnt green beans, a familly favorite!!

      Hey Kristy!
      This is so funny, so you accidentally invented these too?! LOL. Over time I realized that the burned bits were the best part!!! You know, one time I did make them and cooked them for like 2 hours. They ended up completely black, not a fleck of green in sight! And while they were still edible and everyone liked them, I decided after that that maybe it wouldn’t hurt to keep them VAGUELY resembling green beans! =)

    Yummy! Made these last night w/a steak and wow these were great! Couldn’t get the kiddos to eat them, but that just left more for Hubby and I! I will be making these again for sure!

      Hey Melissa! So glad you liked them, but sorry that the kids didn’t. You know, something I’ve been doing with my kiddos recently is microwaving frozen whole green beans, then serving them with a small dipping-cup of ketchup and calling them “Beanie Fries”! LOL. The funny thing is that the moment I gave them that name, my kids started eating them! Ah, the things we do to get our kids to eat their vegetables! =D
