BBQ Quesadilla

Hiya folks. First of all I wanted to let you know that I won’t be posting for the next week or two – we’ve had a death in the extended family that I need to take some time off to deal with. =/ I’ll start posting again the week of August 18th.

I’ll leave you with this BBQ Chicken Quesadilla recipe!

Ingredients:

  • 1 whole wheat tortilla
  • 3 oz. cooked chicken
  • 1 1/2 oz. grated Mozzarella cheese
  • 2 Tb. BBQ sauce
  • 1 Tb. torn cilantro leaves

Heat skillet over medium heat. Spread 1 Tb. of BBQ sauce over the tortilla. Sprinkle one half of the circle with chopped chicken, Mozzarella, and cilantro. Drizzle the remaining sauce over the chicken, then fold half of the tortilla over to create a half circle. Cover the pan and cook for several minutes each side, until tortilla is browned and the cheese is melted.

P90x Nutrition Plan Servings:

Quesadilla is 1 carb serving, 1 dairy serving, 1 protein serving, and 1 condiment serving.

P.S. If you want this to give 1/2 a fat serving, add 2 oz. olives. If you want it to give a vegi serving, add 1 chopped Roma tomato.

    You are a life saver! Im not a bad cook but not very original whne i do so. This has really opened my eyes! Im actually excited to try cooking some new things this weekend. Thank you thank you thank you for posting all these! Although im not much of atofu fan im sure i can find ways around that.
    I just bought the p90x and am ready to drop 20 lbs and wont quit til i do so! I came from a muscle building routine at my gym and a hard core intensely physical job to a office sit on my butt all day long atmosphere. Needless to say i’ve packed on a few pounds. Im ready to transform!

    This is the first recipe I’ve tried on here and it’d definitely a keeper! My husband and I started P90X 3 weeks ago and I was desperate to find something to cook that would work with our new eating plan as well as satisfy my kids appetites. This does the trick. My husband said he finally felt like he was eating REAL food and my kids gobbled theirs up, too. Great recipe and great website! It’s all really helpful…except for one thing…the way your website is displayed has local ads on it and it ALWAYS is advertising Krispy Kreme with a big full-color picture of a hot glazed donut. I know you don’t have any control over that…but it sure makes it hard to click on the zucchini boats…I’m just sayin’…( =

      So glad you liked the quesadillas. That makes me feel so great hearing your hubby’s comment! My goal is always for my hubby to ask “are you sure I get to eat this on my diet?!” That’s when I know I’ve succeeded! =)
