Basil, Tomato and Mozzarella Sandwich


You won’t find many tomatoes in my recipes, because my hubby hates them! lol. (Suffice it to say that for most of my P90x recipes, you could chop a tomato into them to add a full vegi serving and tons of color.) However, sometimes I can’t resist buying a few tomatoes and making a little something for myself. Enter this tomato, basil, and Mozzarella sandwich. Whenever I make it, I feel like I’m eating at a gourmet bistro. Well, given the screaming children in the background, let’s call it a gourmet bistro/daycare! 😉

Recipe Ingredients:

  • 2 slices of whole wheat bread
  • 1 1/2 oz. low-fat Mozzarella cheese
  • 6 leaves fresh basil
  • 1 Roma tomato, sliced
  • 1 Tb. fat-free vinaigrette dressing

Layer tomato, Mozzarella, and basil on bread. Drizzle dressing over basil, spreading any remainder on top piece of bread. Enjoy!

P90x Portion Approach Servings:

1 sandwich is 1 carb serving, 1 vegetable serving, 1 dairy serving, 1/2 condiment serving.

P.S. This sandwich does not keep well – the bread gets soggy very fast. If you need to take it to work in your lunch, I’d recommend packing the ingredients separately and then assembling when you are ready to eat it.

P.P.S. If you want to slide a protein serving in there, try adding 3 oz. cold turkey or chicken. That would be yummy!

    Hmm, sounds yummy. I’m making my shopping list and I’m wondeing about using any other type of bread and also what about drizzling olive oil and vinegar instead of the vinagrette. Would these changes make a huge difference?

      Hi Lebsica!
      I think this would still be yummy with oil and vinegar, however it might not have the extra flavor of the spices in the dressing. You could try just looking up homemade vinaigrette dressing recipes online and see what spices they add to them, and make your own. If you already have oil and vinegar, you’re almost there already! If not, I’m sure it’d be fine without it. And regarding bread, just make sure to choose a whole grain bread – that is what is called for in the P90x nutrition plan. I hope this is helpful!
