Angeled Eggs



Since eggs are such a great p90x protein source, but the yolks are off limits, I created this fun adaptation of deviled eggs for my hubby’s lunch today!

Ingredients:

  • 3 hard-boiled eggs
  • 1 1/2 oz. low-fat ham (I use Foster Farms turkey ham)
  • 1/2 Tb. light mayonnaise
  • 1/4 cup fresh cilantro
  • salt and pepper to taste

Finely dice ham and cilantro, combining in a bowl. Add mayonnaise and stir to combine. Add salt and pepper to taste. Peel hard-boiled eggs and slice them in half lengthwise, removing the yolks. Fill empty holes with ham and cilantro mixture, dividing evenly among the eggs. Refrigerate until chilled.

P90x Nutrition Plan Portions:

Six “Angeled” egg halves are 1 protein serving, 1/4 condiment serving.

    Thank you for all these great P90X friendly recipes! Your husband is at about the same point in the program that I am, so I found this site at a very timely point in the program. 🙂

    A while back, I started using hummus to make psuedo deviled eggs. They are delicious and easy!

      Oooh, great idea Angela!! Hummus would be so delicious, and have the added benefit of a more deviled-egg-like consistency! I’m totally going to try it. Thanks so much for contributing, and let me know if you have any other good recipe ideas I should feature on here!
