Twice “Baked” Potatoes

OK, I’m going to toot my own horn a little on this one. THESE ROCK. When you have only one carb serving to spare, the dish you use it for had better be good. You know how Elaine on Seinfeld asks her boyfriend if he is sponge-worthy? When you are on P90x, the question becomes, are you CARB-WORTHY? Believe me, you won’t believe you’re eating these on a low-carb diet! These P90x twice baked potatoes are in the running for my favorite P90x recipe I’ve come up with so far (rivaled only by my Healthy Mac and Cheese). Try them – I think you’ll find that they are oh-so-carb-worthy! ;-)

Ingredients:

  • Two 2″ x 4 3/4″ white potatoes
  • 4 oz. fat free sour cream or nonfat yogurt (I used sour cream)
  • 1 1/2 oz. lowfat shredded cheddar cheese
  • 3 oz. diced low-fat ham or turkey ham
  • 1 stalk green onion
  • salt and pepper

Heat a pan over medium heat. While the pan is heating up, dice ham, then add to pan and cook for several minutes until browned and toasty (see my P.S.).  While ham is cooking, wash and remove eyes from potatoes. Poke holes all over potatoes with a fork, place in microwave and microwave on high for 5 minutes or until potatoes are cooked, flipping over half way through. (You’ll know they are cooked through when you can easily stick a fork in them.) Turn broiler to High. Cut potato in half and scoop out the insides of each potato half with a spoon into a medium sized bowl. (When scooping, leave the potato skins whole, and place on a baking sheet.) In bowl, combine potato with sour cream or yogurt, shredded cheddar, diced ham, and finely diced green onion. Lightly sprinkle the bottom of each potato boat with salt and pepper, then fill with potato mixture. Broil potatoes for 3-5 minutes, watching carefully, until tops are starting to brown.

P90x Nutrition Plan Servings:

2 Twice Baked Potato halves are 1 carb serving,1 dairy serving, 1/2 protein serving.

P.S. This step is optional since prepackaged ham is already cooked, but I like to do it because it tends to be very wet, and I feel that it gives the potatoes a bit more of a “baked” character. If you are in a hurry, just pat the ham dry, dice it, and proceed without cooking it.

P.P.S. Did you notice that at no point do we actually BAKE these potatoes? LOL! =)

    I have been looking at your site the last few days, and I have to say, some of the recipes look AMAZING! Like this one! ^^^^^ My question for you is, how easily can these be converted to fit the p90x3 guidelines? =) I just started with that program, and would love if I could use your recipes. I am a mom of two boys, full time job outside the home, full time online college student, and housewife so any help and shortcuts I can get would help immensely! =) Thanks so much!
