Turkey, Pesto, and Avocado Sandwich

Happy Thanksgiving (yesterday)! I hope you all had a great one. In honor of Turkey Day, I’m giving you a little sandwich recipe that I am thankful for: the Turkey, Pesto, and Avocado sandwich. Yum! You may have noticed that I’ve been a bit preoccupied with pesto of late. For me, pesto is the new cheese – it looks good on everything! I’ll admit it – even Thanksgiving leftovers are not immune to my pesto obsession. =)

Ingredients:

  • 2 slices of whole wheat bread
  • 3 oz. cooked turkey breast
  • 3 oz. avocado
  • 2 Tb. prepared pesto

Spread pesto on bread, layer turkey breast and avocado, and enjoy!


P90x Nutrition Plan Portions:

1 sandwich provides 1 carb serving, 1 protein serving, 1 fat serving, and 1 condiment serving.

P.S. Alternately, you can spread 2 Tb. low-fat mayonnaise, salt and pepper on the bread in place of the pesto. Also yum!

    Hi. I was wondering how you measure the 3 oz of avocado? by weight? Based on your experience, what is a good estimate (eg. approx. 1/2 a small avocado)?

      Hi Ellen!
      Yes, I just measure the avocado on the little cheapo food scale I bought. If I had to guess, I’d say 1/2 a typical avocado would be about right!

      Hey Ali!
      A bread serving is 200 calories worth of whatever whole wheat bread you use. Mine is 100 calories per slice, so for me this would be one bread serving. You can also check out my P90x calories post for more information on this.

    Hi, i’m 14 and i’m doing the p90x, I want to use this as a packed lunch, i am a level 1, is this the exact portion size and measurements i will need, if not please give me the exact ingriedients for a level 1 (phase 1) and also if this is not enough what else could i add to my lunch to make it completely effective (or any other lunch ideas for school). Thanks

      Hey Blanche!
      Go ahead and download the Phase 1 Level 1 version of my food journal, and start keeping track of your portions. Then you just plug in the portions from the P90x Nutrition Plan Portions section in any particular recipe, and you’ll know you are getting the right amount. Does that make sense?
