Three Cheese Marinara Muffin Melt



So I spent most of yesterday trying to make homemade whole-wheat no-egg-yolk ravioli for you guys. I started around 9 a.m., and it was finally ready to eat at 2 p.m. It was beautiful, filled with yummy filling, and totally gross! lol. Sorry, I tried!

As I was slaving over it, hand kneading the dough, letting it rest for an hour, painstakingly rolling it thinner and thinner, forming and filling each individual ravioli, letting it dry for another hour, I knew that this was way too much work for a P90xer to go to for dinner. Heck, you guys are already committing an hour a day to exercise, the last thing you need is to spend 5 hours hand-stuffing raviolis!

Failed Whole Wheat Ravioli - Wasn't it pretty?!

As I was waiting for the ravioli to dry, I was hungry for lunch, and had half of the ravioli filling sitting there, so I decided to throw it on a whole wheat muffin, put some of the marinara sauce that I was planning to use on the pasta over it and broil it. What do you know, that was the success of the day! It took me 5 minutes, had all of the yummy flavors of the ravioli dish, and none of the hard work!

Ingredients:

  • 6 oz. cooked chicken
  • 1/2 cup low-fat cottage cheese
  • 3 oz. low-fat Mozzarella cheese
  • 1/2 oz. Parmesan cheese
  • 4 whole wheat English muffins
  • 1 cup marinara sauce (see P.S.)
  • 1/4 tsp. Italian seasoning
  • 1/4 tsp garlic salt
  • 1/8 tsp onion powder
  • 1/8 tsp pepper

Cook 6 oz. of chicken if necessary (you can boil it for approx. 15 min). Heat oven broiler to High. Shred chicken into bowl, add cheeses and spices and combine. Very lightly toast English muffins in the toaster on the lowest setting (this helps the muffin stand up to the moisture in the filling and not get soggy). Open muffins onto baking sheet (8 muffin halves total). Layer muffin, filling, and then add a dollop of marinara sauce over the top. Broil under High heat for approx. 3 minutes until heated through.

Makes 8 muffin melts. 4 muffin melts are 1 dairy serving, 1 protein serving, 1 carb serving, 1/2 vegi serving.

P.S. If you don’t haveĀ  marinara sauce but do have a tomato in the fridge, you can make some using my pizza sauce recipe.

    Your Ridiculous!! I mean that in a good way!! Im basically going to just make things off yoru website for the next 90 days of this program because im am not that good of a cook and i think this stuff sounds apetizing even for a former couch potato! LOL! Wow got to give credit where credit is due you are AWESOME!!

    I thought that one whole wheat english muffin (or two halves) equaled one carb serving??? maybe i’m confused but that’s what I’ve been going by… Let me know. Thanks.

    Katie…IN the nutrition plan book on page 16 under carbs it says that 2 english muffiins, whole wheat are one serving.
