Shrimp Fried Rice with Edamame



I know that the P90x nutrition plan already gives you a recipe for shrimp stir fry, but as it has several ingredients that I don’t typically have sitting around my house (minced ginger, anyone?), I decided to make my own version. Technically fried rice is made with day-old rice and stir fry is made with rice you’ve just cooked – but don’t worry, if you make this dish with newly cooked rice, I promise I won’t tell the cooking police.

Ingredients:

  • 2 cups cooked brown rice
  • 3 egg whites (not pictured)
  • 1 cup frozen edamame
  • 4 1/2 oz. ready-to-eat frozen shrimp with tails cut off (the kind I bought was already cooked and then frozen)
  • 2 Tb. low-sodium soy sauce
  • 2 Tb. olive oil
  • 1/2 tsp. garlic salt
  • 1/4 tsp. pepper

Cook rice according to package directions, if necessary. (Police!) Heat skillet over Medium heat, add olive oil. Add edamame and shrimp, cooking and stirring until thawed. Add rice, soy sauce, garlic salt, and pepper, continuing to cook and stir for several minutes. Push rice to the side and crack 3 egg whites into pan, scraping until scrambled. Mix the whole thing together and continue to cook for another minute or two until combined.

P90x Nutrition Plan Servings:

1/2 of full recipe is 1 carb serving, 1 protein serving, 1/2 vegi serving, 1 fat serving, 1/2 condiment serving.

P.S. Do this with 4 1/2 oz. of leftover pork tenderloin, and you have pork fried rice! Do it with chicken, and you have chicken fried rice! Do it with tofu…well you get the idea! =)
