Portabella Pesto Mini Pizzas

Baby pizzas with a grown-up taste! They are yummy. Try them. 🙂


  • 4 Tb. prepared pesto (try my Spinach Pesto)
  • 3/4 cup raw sliced portabella mushrooms
  • 2 whole wheat English muffins
  • 3 oz. low-fat Mozzarella cheese
  • 1 egg white

Turn oven broiler to High. Grate Mozzarella, and combine in a bowl with one egg white. (Usually low-fat cheese has trouble melting, so this technique helps the cheese melt while adding a bit of protein.) Separate English muffins, place the 4 halves on a baking pan. Layer pesto, Portabella mushrooms, and cheese mixture. Broil on High for 2-3 minutes, watching carefully, or until cheese has melted and started to brown.

Full recipe (four Mini Pizzas) is 1/2 vegi serving, 1 carb serving, 2 dairy servings, 2 condiment servings.

P.S. My hubby said “wow” three times in a row when he ate these. Then he asked me to make another batch. I take that as a good sign!

      Hi Anthony!
      Since I’ve based this site around the portion approach, I actually don’t calculate the nutrition facts for each of the items. However, if you’d like to figure out the calories, check out my Calories in P90x Recipes post to figure them out.

    We made these the other night, and my husband and I both thought they were yummy! Thanks! I was so excited to find a pesto recipe that wasn’t loaded with oil. My first attempt turned out a little bit bitter…not sure what I did, though adding more cheese fixed it ;).

      Hi Wen!
      So glad that you liked this recipe and the pesto recipe as well! Regarding the bitterness, that may have been a result of the spinach – my hubby and I have noticed that sometimes spinach can have a bitter taste to it (I don’t know if it’s a freshness issue, or what?). So that’s an idea about the source of the bitterness. So glad you were able to fix it. Thanks for commenting!
