Pesto Feta Scramble

Pesto Feta ScrambleWelcome to our first use of the leftover pesto from the Spinach Pesto recipe! Pesto adds great interest to morning scrambled eggs.

Ingredients:

  • 1 Tb. Spinach Pesto
  • 6 eggs
  • 1 oz. feta cheese
  • 1 (loosely packed) cup spinach, torn into small pieces

Heat skillet over medium heat, spray with nonstick cooking spray. In a bowl, crack eggs, reserving and discarding yolks. Add pesto, feta, and spinach. Stir to combine. Pour into skillet, stirring and scraping constantly until eggs are cooked and spinach is wilted.

P90x Nutrition Plan Portions:

Full recipe is 1 protein serving, 1/2 vegi serving, 1 dairy serving, 1/2 condiment serving.

P.S. If you’d like to add a full protein serving, add 3 oz diced ham or turkey in there! If you want it to be a full vegi serving, add 1/2 cup cooked mushrooms.

    Hi CJ,

    I tried a frittata variation on this idea today, and it came out great, so I wanted to share! Leftover pesto sauce from your Spinach Pesto dish was a perfect addition to a fritatta I developed to work as a P90X breakfast. I was really impressed at how much the flavors of the pesto improved one of my stand-by dishes. Here is the recipe in case you want to try it!

    Ingredients:
    -1 whole egg; 5 egg whites (or more, depending on Phase/Level. You could also leave out the whole egg and just use whites, but I like one egg to provide a little complexity and color.)
    -1/2 cup diced tomatoes
    -1/2 cup chopped Porcini mushrooms (or any mushroom)
    -1/2 cup torn baby spinach
    -2 tablespoons leftover pesto sauce

    Directions
    -Pre-heat oven to 350 degrees F
    -Heat an oven-proof skillet over medium-high heat and spray well with non-stick spray (I use olive all in a mister)
    -Whisk eggs together in a small bowl and add tomatoes, mushrooms, and pesto sauce; blend well
    -Pour egg mixture into heated skillet, and then add torn spinach to the top
    -Cook over medium-high heat until top is almost set
    -Move fritatta to oven for about 7 minutes to set the top

    I focus more on counting overall calorie percentages than P90X servings, but I think this is the breakdown:

    1 protein; 1 veggie; 1 condiment

    Thanks again for sharing all your hard work! I made the Spinach Pesto the other night and my very finicky husband informed me that I could “make that anytime.” :)
