Can you have too many P90x-friendly stuffed pepper recipes? I think not!
Oh, and I know this is the second reader-submitted post in a row. If you’re wondering if I’m getting lazy and just relying on my readers to supply all of my recipes for me, the answer is ABSOLUTELY.

Ingredients:

In medium mixing bowl add tofu and marinara sauce. Let soak while you proceed so tofu can absorb flavors. Cook cous cous according to package directions. Remove tops of bell peppers and de-seed. Add cooked cous cous, frozen bell peppers, and cheese to tofu-marinara mixture. Mix thoroughly and season with salt and cayenne to taste. Stuff peppers with mixture. (Some stuffing may be left-over, depending on the size of your peppers. It’s great the next day as a snack, or just serve it up on the side!) Place peppers in a microwave-safe dish with lid, or cover with plastic wrap. Microwave 10-12 minutes on medium high or until heated through.

One stuffed pepper provides 1 veggie serving, 1/2 carb serving, 1 protein serving, 1/2 dairy serving.
P.S. It certainly doesn’t hurt that these are so PRETTY! =)

Im doing my second P90X run.. I did my first trial this past summer while my fiance was away at training and made it about half way.. He is home now and we are doing it together so I got on to show him your site- I am so happy you are still posting recipes! You have a great site and community here, this is such a great resource THANK YOU!!

This recipe sounds great. Only one problem. I don’t microwave (personal choice and a countertop space issue), Does anyone have a suggestion for conventional oven?

Hey Jay!
I’d follow the directions from the other stuffed peppers recipe on this site (Danielle’s Kicked Up Stuffed Peppers). Basically you’ll steam the peppers first, saute all of the ingredients to heat them through, then stuff the peppers and pop the whole thing in the oven to broil for a few minutes to make it toasty and melt the cheese. =)

You can place in a baking dish cover with foil with a little bit of moisture in dish for some steam and bake at 350° for half hour. Preheat oven and if your cheese is not melting by then y ou can leave in a few more minutes. You are just heating til the inside food gets hot which in process cooks the outer pepper.

Hi,
Great recipe, I’m always looking for ideas that freeze well, so I can make 6-8 of these on a weekend, and have diet-ready lunches during the work week that I don’t have to even think about.
I am not opposed to meat, but I also am not a big tofu person either. Has anyone used other protein sources for this or similar recipes for the P90X diet?
