Many thanks to Angela for her recommendation of hummus as a replacement for egg yolk in deviled eggs!! Today we tried this and YUM. What a delicious P90x recipe, and can’t argue with only 2 ingredients!
Ingredients:
- 3 hard boiled eggs
- 1/2 cup hummus (I used Athenos Hummus, Pesto flavored)
Cut 3 hard boiled eggs in half, removing yolks. Fill cavities with hummus. I used a cookie press to make them pretty!

Full Angela’s Angeled Eggs recipe (6 halves) is 1/2 protein serving, 1/2 carb serving.
P.S. For those of you that haven’t cooked much, you can hard boil the eggs by placing them in cold water in a saucepan over medium heat, bringing it to a boil, then boiling for 20 min. Don’t do like I did, which is boil the water first and drop cold eggs into the water. The temperature difference made them crack and a bunch of egg white escaped into the water, resulting in lame-looking eggs, like mine in the picture!! lol.

Yay! I am glad you liked them! Yours look way prettier than mine usually do – the cookie press idea is a great one.
