Wondering what to eat on your wheat bagel or 2″ x 4 3/4″ potato?
Look no further than this tasty cottage cheese spread. I can’t take full credit for this one – my parents were on the Atkins diet as a kid and we’d have this all the time – I’m pretty sure that the concept is lifted from them. But hey, we low-carb diet types need to stick together!
Ingredients:
- 2 cups 1% cottage cheese
- 1 stalk green onion
- 1/2 cup fresh cilantro leaves
Finely dice cilantro and green onion, combine with cottage cheese. Spread on whole wheat bread, English muffin, bagel, or potato.
P90x Nutrition Plan Portions:
1 cup of Herbed Cottage Cheese spread is 1 dairy serving. (But don’t forget to count the servings for whatever you spread it on!)
P.S. This is a great change of pace for breakfast when you’re starting to get tired of eggs!!

I’m having this right now (i know, kind of a late breakfast). I’m not crazy about plain cottage cheese, but this herbed alternative made it very tolerable. Nice and easy to prepare too. Thanks for posting!

This is awesome, Lebsica! So glad you like it. Another idea I had was that you could strain the cottage cheese overnight to get rid of some of the moisture (put it in a strainer over a bowl in the fridge overnight), then try blending the results in a blender. I bet it would end up more like a cream cheese spread that way! I haven’t tried this, but it’s worth an attempt one of these days…
