Herbed Cottage Cheese Spread



Wondering what to eat on your wheat bagel or 2″ x 4 3/4″ potato? ;-) Look no further than this tasty cottage cheese spread. I can’t take full credit for this one – my parents were on the Atkins diet as a kid and we’d have this all the time – I’m pretty sure that the concept is lifted from them. But hey, we low-carb diet types need to stick together!

Ingredients:

  • 2 cups 1% cottage cheese
  • 1 stalk green onion
  • 1/2 cup fresh cilantro leaves

Finely dice cilantro and green onion, combine with cottage cheese. Spread on whole wheat bread, English muffin, bagel, or potato.

1 cup of Herbed Cottage Cheese spread is 1 dairy serving. (But don’t forget to count the servings for whatever you spread it on!)

P.S. This is a great change of pace for breakfast when you’re starting to get tired of eggs!!

    I’m having this right now (i know, kind of a late breakfast). I’m not crazy about plain cottage cheese, but this herbed alternative made it very tolerable. Nice and easy to prepare too. Thanks for posting! :)

      This is awesome, Lebsica! So glad you like it. Another idea I had was that you could strain the cottage cheese overnight to get rid of some of the moisture (put it in a strainer over a bowl in the fridge overnight), then try blending the results in a blender. I bet it would end up more like a cream cheese spread that way! I haven’t tried this, but it’s worth an attempt one of these days…
