Ham and Mushroom Omelet



You’ll find mushrooms in a lot of my recipes because my hubby loves them! So here’s this morning’s breakfast.

Ingredients:

  • 3 egg whites
  • 3 oz. turkey ham (I get the prepackaged chunk ham in the meat section, not slices.)
  • 4 mushrooms
  • 1 oz. lowfat cheese (I get the already shredded Mexican blend made with 2% milk)
  • 1/4 cup cilantro sprigs
  • salt and pepper to taste

Spray small round skillet with nonstick cooking spray and heat on Medium. While skillet heats, slice mushrooms, dice ham. Crack eggs into a bowl, reserving and discarding yolks. Add egg whites to pan, swirling it to cover bottom. To one half of the circle, add sliced mushrooms, ham, cheese and cilantro. Salt and pepper the whole thing to taste. After the egg is slightly browned underneath and comes free of the pan, flip the side of the circle over the filling. Cover and let cook for another 2-3 minutes until cheese is melted and mushrooms are slightly softened.

P90x Nutrition Plan Portions:

Omelet is 1 protein servings, 1 vegetable serving, 1 dairy serving.

P.S. If you want to up the protein even more, use 6 egg whites instead of three. My husband found that was just too much egg for him to plow through, but if you can eat it all that would mean 1 1/2 protein servings at breakfast. Getting in all of the protein is the tough part of the first phase of P90x!

    Under the P.S. portion, you mention 6 egg yolks…is that correct or should it be whites?

    Thank you for this whole site! I am just starting out here on P90X and with a household with 2 little ones, it’s hard to make all of the meals outlined in the booklets, this is a fantastic alternative!

    Im confused with the eggs portions I guess. In the guide it says that 6 egg whites are 1 portion and that 6 oz of ham is 1 portion. Yet in the guide the chicken scramble has 8 eggs and 3 oz of chicken as 3 protein and 2 dairy. Do I have the wrong serving number or something?
