Crustless Ham and Spinach Quiche



Yay for cottage cheese! Once again, cottage cheese has swooped in to save one of our favorite, typically-cheese-laden dishes – the quiche. And it is now low-carb and P90x-friendly to boot! This came out really flavorful and tasty – my hubby thought it had the perfect amount of seasonings, and he usually adds salt to everything. Also, if you’re not a vegi fan (which I’m not) this is a nice way to hide a partial vegi serving in your breakfast – spinach cooks down and hides so nicely in there, and it doesn’t seem to change the flavor significantly.

Ingredients:

  • 9 egg whites
  • 4 1/2 oz. turkey ham
  • 12 oz. low-fat cottage cheese
  • 2 oz. shredded low-fat cheddar cheese
  • 1 oz. grated Parmesan cheese
  • 3 cups raw spinach
  • 1/4 tsp garlic salt
  • 1/4 tsp pepper
  • 1/8 tsp onion powder

Preheat oven to 350 degrees. Dice turkey ham. Spray skillet with nonstick  cooking spray, and add spinach, cooking and stirring over Medium heat until wilted. Remove from skillet, and add diced ham, cooking and stirring until browned. Place spinach on paper towel and pat dry to remove any excess moisture. (I also cut the spinach up a bit more after cooking it so that the pieces aren’t too big.) Spray bottom of pie plate with nonstick cooking spray. In a bowl, combine egg whites, ham, spinach, cheeses, garlic salt, pepper, and onion powder, stirring until combined. Pour into pie plate. Bake for 35-40 minutes until eggs are set and a toothpick comes out clean.

P90x Nutrition Plan Servings:

1/3 of the pie plate is 1 protein serving, 1/2 vegi serving, 1 dairy serving, 1/2 Single snack serving.

P.S. If you want to get a full vegi serving out of this dish, add an additional 1 1/2 cups cooked mushrooms in there!

    OMG! I’m super excited to try this out with a few tweaks in the future! One of my biggest regrets about P90X (especially phase one) is giving up quiches, one of my favorite meals! One of the greatest things about quiches is how versatile they are, so thank you so much, I’ll probably make this with changes multiple times!

    Cj, I am new to P90x (week 2) and am still in the research phase. I don’t completely understand the servings process. (what is considered protein, carb, friut, etc.) It is all still a little confusing. But I have tried this quiche and it is AMAZING!. I have had it for breakfast all week! Love that I can fix it ahead and eat it all week. Do you have any idea how many calories in this dish?

      So glad you like the quiche!! How fun! It’s always kind of fun when people who aren’t doing P90x yet like the food. I guess that’s a good sign!

      The different servings are outlined in your P90x Nutrition Guide which came with your copy of P90x. If you’re one of the many unfortunates who purchased your program second-hand without a nutrition guide, you’ll have to do a bit more work tracking down the info. Here is my link to the official P90x Nutrition Guide – that’ll get you started figuring out your level. However it’s missing a few pages, including the list of what foods count for what servings in the portion approach. In the comments on that same page, I’ve outlined general guidelines regarding which foods count for what. Also, check out the calories in the portions - that will help you make informed decisions regarding what you buy. To figure out how many servings you need, go ahead and identify your level, and then download the appropriate P90x food journal page for Phase 1.

        Thanks for the info on the nutrition guide. I actually do have a copy of the book. So I will study it a little more.
        Do you have any idea how many calories is in a portion of the quiche? The serving you mentioned is 1/3 of the pie.BTW… I am in plan 2 area for the nutrition and exercise.
