Basil Tomato Mozzarella Salad

Recently my obsession with the tomato, basil, and mozzarella combo has raised its ugly (tasty?) head. Basil is so cheap during the summer that I bought a massive basil plant and have been eating off of it for weeks. I wanted to make my tomato, basil, and mozzarella sandwich, but it was bugging me how soggy the bread kept getting. So I decided to nix the bread entirely, and sure enough, a salad was born. It captures the delicious, fresh flavor of summer, while keeping your fingers clean, and without taking up a P90x carb serving – what more can a P90xer ask? =)

Recipe Ingredients:

  • 1 1/2 oz. low-fat Mozzarella cheese
  • 6 leaves fresh basil
  • 1 Roma tomato, sliced
  • 2 Tb. fat-free vinaigrette dressing

P90x Portion Approach Servings:

Full recipe is 1 dairy serving, 1 veggie serving, 1 condiment (OR 1 fat serving – see my P.S.)

P.S. An oil and vinegar vinaigrette dressing can count as either 1 condiment serving or 1 fat serving. This can be a lifesaver, because it can actually be difficult to get your fat servings in during P90x – that’s what happens when avocado, olives, and oils are the only allowed sources of fat!
